Eton Mess is so-called because it’s traditionally served at English school, Eton College’s annual cricket game. This version is made a little more special with the addition of a splash of sherry!
- 500g strawberries, hulled and quartered
- 2 tablespoons sherry
- 2 teaspoons castor sugar
- 1.5 cups thickened cream
- 6 large bought meringues (or bought pavlova), broken into pieces
- Soak strawberries in sherry and sugar for 30 mins
- Whip cream until it forms soft peaks. Drain strawberries and beat reserved liquid into cream.
- Gently fold strawberries and meringue into cream.
- Serve in individual bowls or glasses.
