A potjie is so quintessentially South African, but if you haven’t made one in a while, here is a fuss-free, simple recipe to try!
Ingredients:
* 2 kg beef, cut into 1 inch cubes
* 1 large onion, chopped
* 3 garlic cloves, minced
* 2 tbsp olive oil
* 2 tbsp tomato paste
* 2 tbsp flour
* 1 cup red wine
* 2 cups beef stock
* 2 large carrots, sliced
* 1 large sweet potato, peeled and diced
* 2 large potatoes, peeled and diced
* 1 cup green beans
* 1 cup frozen peas
* 1 tsp dried thyme
* 1 tsp dried rosemary
* Salt and pepper to taste
Instructions:
1. In a large potjie pot, heat the oil over medium heat.
2. Add the onions and garlic and cook until softened.
3. Add the beef and cook until browned on all sides.
4. Stir in the tomato paste and flour and cook for 2 minutes.
5. Pour in the red wine and beef stock, and bring to a boil.
6. Add the carrots, sweet potato, potatoes, green beans, peas, thyme, rosemary, salt, and pepper.
7. Reduce the heat to low, cover the pot and simmer for 2 to 3 hours, stirring occasionally, or until the meat and vegetables are tender.
8. Serve with rice or crusty bread.
