Get in your daily fibre with these delicious health rusks!
Dry ingredients:
- 1 kg self raising flour
- 1.5 cups sugar
- 1.5 cups sunflower seeds
- 1.25 cups digestive bran
- 1 cup raisins (optional)
- 0.5 tsp salt
Wet ingredients:
- 500g melted margarine
- 500mls buttermilk/maas
- 2 eggs
- 0.5tsp vanilla essence
Method:
- Mix all wet ingredients into dry ingredients
- Place into a greased oven pan and bake for approx. 1 hour at 170ºC
- Leave to stand for a day before cutting into fingers
- Place fingers on a large tray and dry overnight in a cool oven of 80-90ºC
Store in an airtight container – and try not to finish them all in one day!
