This is a coffee cake, with a whole lot of extras! Dried fruit and cloves add an exotic, aromatic touch to this traditional recipe!
INGREDIENTS
- 1/2 cup, black hot coffee
- 4 Cloves
- 2 cups self-raising flour
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cinnamon
- ½ teaspoon bicarbonate of soda
- 120g softened butter
- 1 cup brown sugar
- 2 beaten eggs
- ½ cup golden syrup
- 2 cups dried mixed fruit
METHOD
- Soak the cloves for 30 minutes in the hot coffee
- Preheat oven to 180º C
- Sift the flour, nutmeg, cinnamon and bicarb. In a separate bowl, cream butter and sugar until light and creamy.
- Strain coffee to remove the cloves, add flour mixture to creamed mixture, along with eggs, syrup and coffee. Beat. Stir in mixed fruit.
- Place mixture into greased cake tin and bake for 45 minutes or until skewer comes out clean.
- Dust with icing sugar and add some fresh, seasonal fruit for an extra burst of flavour!
