Lemon Curd is an oft-forgot traditional staple. The delicious balance between sweet and sour can be enjoyed on scones, waffles, muffins, pancakes or even straight out the jar!

Ingredients:
- 3 eggs
- 1 lb (450g) sugar
- 3 large lemons
- 4 ozs (100g) butter or margarine
Method:
Grate rind of lemons, then squeeze out juice, add to sugar and butter. Heat slowly, stirring occasionally. Whisk eggs well. Remove mixture from heat and allow to cool slightly, then stir in the eggs. Return to stove and allow to boil slowly for 4-5 minutes, stirring all the time. Cool slightly and bottle. Cover when cold.
